Cream Cheese Chiffon

Dear friends, here the recipe that i have been long due to post... enjoy baking !


Yummy Yummy

Double boil - Milk, Cream Cheese & Butter

Cream  Cheese mixture & Egg yolk

Mixed in the flour to the cream cheese mixture

Egg white & Cream of tartar

Cream cheese mixture & Egg white mixture

Put batter into chiffon cake pan

Turn upside down to cool down the cake

Tadaa!!! The out-come


Ingredients:
A: 60g Milk
     45g Cream Cheese
     25g Butter

B: 4 Egg Yolks

C: 65g Flour (sifted)

D: 4 Egg White
     1/8 tsp Cream of tartar
     90g Sugar
     Pinch of salt

Methods:
1. Preheat oven and the chiffon pan at 170'C.
2. Cook (A) over double-boiler until well blended and thickens. Remove and let it cool down.
3. Add (B) into cooled cheese mixture and mix until well combined.
4. Fold in (C) and mix until smooth.
5. Beat egg white until frothy, add in cream of tartar and beat till soft peaks. Add salt and sugar, beat till stiff peaks.
6. Fold 1/2 of the egg white into cheese mixture, gently fold with a spatula until just blended.
7. Pour cheese mixture (step 6) into the rest of egg white, fold it gently until well blended.
8. Put the batter into the chiffon caker pan, bang the pan on hard surface to release the bubbles and bake for 35 - 40 minutes.
9. When cake is cooked, invert the cake to cool (refer to the picture above). Remove the cake from the cake pan when completely cool.



Avocado Pound Cake

Avocado Pound Cake

Avocado mixed wt lemon juice

Butter mixture & egg

Add in condensed milk / sweetener creamer

Add in flour mixture

Fill in the loaf pan 3/4 full


Ingredients:
A: 120g   Avocado flesh
     1 tbsp Lemon juice
     115g   Butter
      50g    Sugar
      2 nos  Egg
      150g  Condensed milk or Sweetener creamer

B: 150g   Cake Flour
     100g   Flour
     1 tsp    Baking Powder
     1/4 tsp Baking Soda

Methods:
1. Combine avocado flesh with lemon juice and mashed. Pass it through a sieve. Set aside.
2. Sift the ingredients B together and set aside.
3. Preheat oven at 170'C. Greased some butter on the loaf pan.
4. Cream butter and sugar until pale and fluffy, add in egg one by one, beat well . Beat in condensed milk until well incorporated.
5. Add in half the sifted flour in  and mix in low speed until combined add the balance in. When the mixture is smooth, beat in the avocado on low speed.
6. Pour batter into prepared pans and bake for 35 minutes.

Cucumber Lime Juice


Making a refreshing drink for hot sunday afternoon ..... is really cool you down and quench your thirst!


Cucumber, Lime and Mint Leave


Ingredients & Methods:
Juice from 2 Cucumbers
Juice from 3 - 4 Limes (depending to your taste)
3 - 4 tbsp Lemon peel sugar syrup (adjust according to your taste)
1 tsp Salt
2 cups Ice
Some Mint leave
Mixed all the ingredients together and serve.

Meatloaf & Baked Cajun Potatoes

Simple and easy, is just take 30mins to prepare and 1 hour to bake for both dish.


Ground meat, chopped onion, egg, milk, cracker crumbs, salt & pepper


The sauce - ketchup, mustard & brown sugar


Form the meat into loaf shape and pour the sauce on the top
Ingredients:
450g   Ground meat (any meat you prefer)
1          Egg
1          Onion, chopped
150ml Milk
168g   Cracker crumbs
salt & pepper to taste
16g      Brown sugar
19ml    Mustard
38ml    Ketchup   

Methods:
  • Preheat oven to 175'C.
  • In a large bowl, combine the meat, egg, onion,milk, cracker crumbs. Season with salt and pepper to taste and form into loaf place on a lightly greased baking dish or into a loaf pan.
  • in separate bowl, combine the brown sugar, mustard and ketchup. mix well and pour over the meatloaf.
  • Bake for 1 hour.


Cajun Potatoes
Cajun mixed spice
Methods: 
  • Slice potatoes as photo above.
  • Mixed the cajun spice with olive oil.
  • Brush the potatoes with cajun mixed and bake for 1 hour.
